Smoked Turkey Breast October 10, 2010

I was recently invited to a tailgate party by some friends for a big rival game.  Having gone in the past I knew there would be lots of yummy foods but many would not be good for my food choice selections so I decided to smoke a turkey breast.

After doing some research I found that skinless turkey breast was only 4 grams of fat for 3 1/2 ounces of meat.  Now that is a deal!  So I found a large turkey breast (7 pounds) and took the skin off, found a new rub that had a kick to it and commenced to smoking a tasty treat.  The hardest part for me was selecting the rub I wanted to use because I found so many I wanted to try…..ahhhhh, so many rubs to sample, so little meats 🙂  I de-skinned my turkey breast and applied my rub until the breast was well coated.  I Made sure my smoker was at the proper temp of 250 degrees prepared my beer water to keep the meat moist during the smoking process and closed the door.

In about 4 hours I took out the turkey breast and let it “rest” before I sliced it.  The aromas were wonderful and so very tempting!  But definitely well worth the wait.  The smoked turkey breast was a big hit at the tailgate party and what fun to provide something low fat for our friends and they were totally clueless 🙂
