Mango Pepper Jelly

6 large ripe mangoes

12  (or less) scotch bonnet peppers, seeded and finely chopped

1 box Sure Jell fruit pectin (found by jello)

5 ½ cups sugar (you can cut back to 5 cups)

3 Tlb. white vinegar

Jelly jars

Peel, chop and simmer mangoes to a pulp over low heat.  Put chopped peppers into a small sauce pan, add three tablespoons white vinegar and simmer over low heat until peppers are soft.  In a large saucepan, stir fruit pectin into the mango pulp.  Bring to a full rolling boil on high heat, be sure to stir constantly.  Add peppers.  Stir in the sugar.  Return to a full rolling boil and boil for exactly 2 minutes or until a jelled consistency begins to form.  Stir constantly.  Remove from heat and skim off any foam with a wooden spoon. Ladle immediately into prepared jelly jars, filling within 1/8 inch of tops.  Wipe jar rims and threads for tight seal. Cover with lids that have been boiled in hot water.  Screw bands tightly on.  Wipe jars with towel and place on the counter to cool.
