I love potatoes and love to use them in a variety of different recipes. Right now at the farmers market you can find red , yellow and purple potatoes. These colors just enhance any recipe! I do use a bit of low fat Blue Bonnet Lite but with only 10 grams of fat in the entire recipe, you still can eat a nice share without any guilty feelings.
Fresh herbs are also very plentiful at the market right now so you can use just about any variety you would like. In mine I used some fresh garlic, parsley and lemon thyme. Enjoy!!!! For comments/questions email firstname.lastname@example.org
Steam or roast 1 pound of small red,yellow and purple potatoes that have been cut into . until they are just tender. In a serving dish mix 2 Tlb. of Blue Bonnet Lite Margarine and some chopped mixed fresh herbs. Toss with warm potatoes and serve immediately. Some fresh garlic mixed in with the vegetables is wonderful!!
