My first taste of mango salsa was at a Fourth of July event many moons ago from the grandmother of my daughters friend – whew.  Any way the taste was awesome!  The grandmother passed out the recipe to many of us and it was pretty easy because there were very few ingredients.  Over the years I have made the salsa many times and have changed up the recipe a bit.  Recently a friend here in the Mitten told me how he put rice wine vinegar in his mango salsa….ummmm, that would make it interesting and he was right!  It gives it a really nice flavor, so if you already make mango salsa or any type of salsa try this recipe, it’s really good.   Enjoy!!!  For comments/questions email ramona@lowfatdivablog.com

Mango Salsa

  • 1  cup  diced peeled mango, from a 1/2-pound mango
  • 2  diced plum tomatoes
  • 2  tablespoons diced red onion
  • 1  teaspoon minced serrano or habanero chile (how much depends on how zesty you want your salsa)
  • 1  tablespoon  fresh lime juice (I use a bit more)
  • 1/2  teaspoon  unseasoned rice vinegar
  • 2  tablespoon  chopped cilantro
  • Salt and freshly ground pepper
    In a glass bowl place your mango, tomatoes and onions.  Mix the rest of your ingredients and pour over the mango mixture.  Gently toss to evenly coat.  Place in frig for at least 1-2 hours before serving so flavors can blend – Delish!
