What Is This Vegetable? August 17, 2012

I have let messages on my face book page as well as my Low Fat Diva page with a picture of this vegetable.  Do you know what it is?  I love these.  They are a cross between a radish and a broccoli stem (not the flower part).  I normally just peel them and slice them up to eat them but lately I have been putting them sliced in salads and cole slaw, it gives the recipe a bit of a peppery taste.

I noticed the vegetable is also used in Indian recipes.  People who know the vegetable eat them raw, slice and fry them as you would a zucchini, toss them with a bit of olive oil and lemon, dip them, chop them, puree them…..well the list goes on.

Give them a try the next time you are at the market or ask a farmer if they have any…………………………………………………………………………

Kohlrabi ( pronounced cole – rabe)
