The more I learn about people who suffer from gluten issues the more I am amazed by the different items gluten is put into. Sometimes everyday items we use have gluten as an additive (like oat meal, peanut butter, etc) which can make it rough on someone trying to find a snack. Which is one of the reasons I’m so thankful for thr recipe I want to share with you for granola bars. These bars are awesome and because they taste so great you will have no problem getting the rest of your family to eat them ……………well, it might be a problem if they eat them all 🙂 The recipe calls for raisins but you can always add a different dried fruit to them or you can add chocolate chips, butterscotch chips, etc. They are delish. Gluten Free Granola Bars
1/2 cup peanut butter (to lower the fat you can use Better n’ Peanut Butter)
1/2 cup honey
3 Tlb. brown sugar
1 tsp. vanilla
2 1/2 cups tasted rice cereal
2 cups old fashion oats (gluten free)
3/4 cup raisins (cranberries, chocolate chips, etc.)
Line a 8×8 pan with foil. Place the peanut butter, honey and brown sugar in a large pot. Heat on med high for about 2 minutes until bubbly and the mixture has melted smooth. Remove from heat, add vanilla. Stir until smooth. Add the cereal and oats. Stir until combined. Stir in the raisins (chips, etc). Press firmly into the prepared pan. Allow to cool. The longer you wait the better incorporated the flavors have to blend. Cut into bars the size of your choice. Wrap in foil or plastic wrap. Enjoy!!! Positive you will need to make lots to keep on hand, yes, they are that good!
